用热脱附方法分析百香果香气成分

摘 要:该文采用热脱附技术富集百香果的果肉、果汁和果籽中的香气成分,并通过气相色谱-质谱联用技术(GC MS)进行分析与鉴定。结果表明,百香果的香气成分以酯类、醇类、烯类和酮类为主,同时含有少量噻唑类、呋喃类、 苯类和醛类等化合物。百香果肉含量较高的香气成分是丁酸乙酯、乙酸乙酯、己酸乙酯,百香果汁相对含量较高的 香气成分是丁酸乙酯、己酸乙酯、乙酸乙酯、丁酸己酯和乙酸己酯,百香果籽中相对含量较高的香气成分是丁酸乙 酯、己酸乙酯、乙酸乙酯、丁酰乳酸丁酯和己酸己酯。本文对比分析了百香果各个部位间的香气成分,为深入研究其 香气组成提供了科学依据。

Analysis of Aroma Components in Passion Fruit by Thermal Desorption Method

Abstract: In this paper,thermal desorption technology was used to enrich the aroma components in the pulp,juice and seeds of passion fruit,and gas chromatography- mass spectrometry(GC- MS)was applied for analysis and identification. The results showed that the aroma components of passion fruit were mainly esters,alcohols,alkenes and ketones,with a small amount of compounds such as thiazoles,furans,benzenes and aldehydes. The aroma components with relatively high content in passion fruit pulp were ethyl butyrate,ethyl acetate and ethyl hexanoate; those with relatively high content in passion fruit juice were ethyl butyrate,ethyl hexanoate,ethyl acetate,hexyl butyrate and hexyl acetate. The aroma components with relatively high content in passion fruit seeds were ethyl butyrate,ethyl hexanoate,ethyl acetate,butyl butyryl lactate and hexyl hexanoate. This paper compares and analyzes the aroma components among different parts of passion fruit,which provides a scientific basis for in-depth study of its aroma composition.
