摘 要:本研究分别应用化学分析容量滴定法、卡尔费休水分滴定法、折光仪、差示扫描量热仪等研究了不同维果 灵的原料含量、微量水分、密度、挥发性、沸点以及通过熔融结晶曲线表现出的熔融峰与结晶峰的位置及焓值大小, 另外,研究了维果灵与水在一定比例下于不同温度储存条件下的维果灵衰减速率。结果表明:维果灵中存在一定的 微量水分,随着储存时间延长增加的水分使得相应的质量特性指标出现变化。维果灵在室温放置时具有较高的挥 发性及较高的沸点。在同一温度下储存时,随着储存时间的延长维果灵与水的熔融峰均向低温方向移动,同时水峰 宽度出现变宽。另外,根据10℃、20℃、30℃分别保温1h后熔融峰面积与初始值相比其减少率随温度的变化情况,通 过阿伦尼乌斯公式进行方程拟合得到维果灵与水混合后的衰减快慢。本研究所创建的各种方法可以评价维果灵原料 的质量特性,对于原料的验收、质量控制以及不同温度下维果灵在饮料中的杀菌作用时间具有一定的指导作用。

Evaluation of Quality Properties of Velcorin

Abstract: In this paper,the raw material content,trace moisture,density,volatility,boiling point,as well as the positions and enthalpy values of the melting and crystallization peaks exhibited by the melting-crystallization curve of different Velcorin were studied respectively by chemical analysis volumetric titration, Karl Fischer titration, refractometer,differential scanning calorimeter etc.. In addition,the decay rate of Velcorin with water at a certain ratio under the storage condition of different temperature was investigated. The results showed that there was a certain amount of trace water in Velcorin,and the increasing water content with prolonged storage time caused changes in corresponding quality characteristics. Velcorin had high volatility at room temperature and high boiling point. When stored at the same temperature,the melting peak of Velcorin and water moved towards lower temperatures and the width of the water peak widened with the extension of storage time. Moreover,according to the decrease rate of the melting peak area compared to the initial value after being stored at 10℃,20℃,and 30℃ for 1 hour respectively, the decay rate of the mixture of Velcorin and water was obtained by equation fitting using the Arrhenius formula. The various methods created in this study can evaluate the quality characteristics of the raw materials of Velcorin,which has a certain guiding role in the acceptance,quality control,and sterilization time of Velcorin in beverages at different temperatures.
