摘 要:研究含乳碳酸饮料生产过程中的稳定剂和消泡剂对气容量的影响。使用添加量20%的含乳基底浓缩液 为原料,以稳定剂用量、消泡剂用量和CO2 气流量为研究对象,在单因素实验的基础上,以气容量为响应值,通过响 应面分析各因素水平对气容量的影响,并预测目标气容量的最优工艺。结果表明:单因素实验确定稳定剂用量为 0.50g/L~0.70g/L,消泡剂用量为 0.03g/L~0.07g/L,CO2 气流量为 4.50g/L~5.50g/L;响应面分析预测气容量 2.70 倍(20℃)的最佳工艺为:稳定剂 0.525g/L、消泡剂 0.04g/L、CO2 气流量 5.33g/L,由此工艺试产得到的实测平均气容 量为2.64 倍(20℃),与预测值偏差 2.2%,表明该模型具有一定预测性。本文为同类汽水的气容量研究与开发提供 一定的理论和技术依据。

Optimization Research on Gas Volume in Milk Carbonated Beverages

Abstract: The impact of stabilizer and defoamer on gas volume of milk carbonated beverages during producing was studied. Base concentrate containing 20% milk was used as raw material to study the flow of carbon dioxide and the amount of stabilizer and defoamer. On the basis of single factor experiments,response surface was used to analyze how factors impact gas volume and predict the optimal production condition for target gas volume. Single factor experiments results indicated that the optimal parameters were 0.50g/L~0.70g/L amount of stabilizer,0.03g/L~ 0.07g/L amount of defoamer and 4.50g/L~5.50g/L of carbon dioxide. Response surface analysis predicted that the optimal production condition for target gas volume of 2.70 times(20℃)was 0.525g/L amount of stabilizer,0.04g/L of defoamer and 5.33g/L of carbon dioxide. Trial production under this condition resulted in a measured value of 2.64 times gas(20℃)volume by average with 2.2% deviation from predicted value,which indicated the model had certain predictability. It would provide theoretical and technical basis for carbonation study and development of similar beverage products.
