基于Box-Behnken 设计探索灵芝大枣 固体饮料干法制粒工艺

摘要:目的:探索灵芝大枣固体饮料颗粒的组方配比与干法制粒工艺参数。方法:采用正交试验考察灵芝大枣固体饮料颗粒组方配比,测定颗粒得率、流动性、吸湿性,通过主成分分析进行多指标综合评价,确定最佳组方配比;采用单因素考察与Box-Behnken 设计探索不同制粒参数水平下灵芝大枣固体饮料颗粒得率,通过方差分析确定最佳干法制粒工艺参数。结果:灵芝大枣固体饮料颗粒最佳组方配比为:浸膏干粉100%、蔗糖50%、糊精25%、硬脂酸镁0.5%,最佳制粒工艺参数为:送料速度20r/min、滚轮压力50MPa、滚轮转速10r/min,工艺放大验证时,采用优选的组方配比及工艺参数制备的颗粒具有比较稳定的得率,且流动性、吸湿性、堆密度、溶化性及颗粒色泽味道考察均符合颗粒剂制剂通则要求。结论:正交试验优选的灵芝大枣固体饮料颗粒组方配比及BBD 设计优选的工艺参数可以保证灵芝大枣固体饮料颗粒工艺稳定,物理特性符合要求,按此配比和工艺参数,可制备品质稳定的固体饮料,适用于工厂生产

Exploring the Dry Granulation Process of Ganoderma Lucidum Jujube Solid Beverage Basedon BBD Design

Abstract: Objective:To explore the formula ratio and dry granulation process parameters of ganoderma lucidum andjujube solid beverage particles. Methods:Orthogonal test was used to investigate the composition ratio of ganodermalucidum jujube solid beverage particles,determine the particle yield,fluidity,and hygroscopicity,and conduct acomprehensive evaluation of multiple indicators through principal component analysis to determine the bestcomposition ratio;single factor investigation and Box- Behnken design explored the yield of ganoderma lucidumjujube solid beverage particles at different levels of granulation parameters,and the analysis of variance to determinethe optimal dry granulation process parameters. Results:The best composition ratio of ganoderma lucidum jujubesolid beverage particles was:extract dry powder 100%,sucrose 50%,dextrin 25%,magnesium stearate 0.5%,andthe best granulation process parameters were: feeding speed 20r/min,roller pressure 50MPa,roller speed 10r/min,when the process was scaled up and verified,the particles prepared with the optimal composition ratio and process parameters have a relatively stable yield,and fluidity,hygroscopicity,bulk density,melting,and particle color andtaste. The inspections are in compliance with the general requirements of granule preparations. Conclusion:Orthogonal test optimized Ganoderma lucidum jujube solid beverage particle composition ratio and BBD designoptimized process parameters can ensure that the process of Ganoderma lucidum jujube solid beverage granules isstable and the physical properties meet the requirements. According to this ratio and process parameters,it can beprepared solid beverages with stable quality,suitable for mass production.
