摘要:本文研究了黄原胶浓度对其溶液粘度与zeta 电位的影响。确定了两者测定时的适宜浓度分别为1%、0.1%,并且研究了氯化钾对不同来源黄原胶在粘度、剪切性能值、pH、zeta 电位的影响。经数理统计发现zeta 电位与粘度比值(加盐时溶液粘度/不加盐时溶液粘度)之间在显著性水平α=0.05 上存在着较高的负相关性。

Studies on Effects of Potassium Chloride on the Quality Properties of Xanthan Solutions

Abstract: In this paper the effects of different concentrations of xanthan solution on the viscosity and zeta potentialwere studied,and the appropriate concentration for determination of both was 1% and 0.1% respectively.In addition,the effects of potassium chloride on the viscosity,shearing property value,pH and zeta potential of xanthan gumprovided by different suppliers were compared.Through mathematical statistics,it was also found that there existed ahigh negative correlation between zeta potential and viscosity ratio(solution viscosity with KCl / solution viscositywithout KCl)at significant level of α=0.05.
