γ-氨基丁酸的生理活性 及其在饮料中的应用现状

摘要:酌- 氨基丁酸是抑制人体神经讯息传递的重要物质,它参与人体多种代谢活动,具有很高的生理活性,近年来已成为我国功能饮料方面应用研究的热点。为进一步加深对酌-氨基丁酸的应用研究,该文论述了酌- 氨基丁酸的生理活性及其在饮料中的应用现状, 并对富含酌-氨基丁酸饮料的未来前景进行了展望。酌-氨基丁酸具有广泛的兼容性,热稳定性好,添加一定剂量的酌-氨基丁酸到饮料中,可以满足不同消费群体的需求,市场前景广阔。

The Physiological Activity of Gamma-aminobutyric Acid and its Application in Beverage

Abstract: Gamma-aminobutyric acid is important substance of inhibitinghuman neural signals,it participates in a variety ofmetabolic activities,and has very high physiological activity.In recent years,it has become a hot topic in the researchof functional beverage in China.In order to further study the application of gamma-aminobutyric acid,this paperdiscusses the physiological activity of gamma-aminobutyric acid and its application in beverage,and the futureprospects of gamma-aminobutyric acid beverage are prospected.Gamma-aminobutyric acid has wide compatibility,goodthermal stability,and the adding a certain dose of gamma-aminobutyric acid to beverage can meet the needs of differentconsumer groups,and the market prospect is wide.
