恰玛古蟠桃复合果蔬汁饮料的研制

摘要:以恰玛古和蟠桃为主要原料,白砂糖、Vc、柠檬酸等为辅料,并加入适量的稳定剂研制而成的复合型果蔬汁饮料。通过正交试验得出,恰玛古蟠桃复合果蔬汁饮料的最优配方为恰玛古浆30%,蟠桃浆15%,白砂糖8%,柠檬酸0.08%,CMC-Na0.04%,黄原胶0.04%,果胶0.06%,所得产品均匀一致,口感细腻,酸甜可口,风味独特。

Development of Complex Juice Drink made of Qiamagu and Flat peach

Abstract: Using Qiamagu and flat peach as the main raw material,sugar,Vc and citric acid as additives,and stabilizer acomplex fruit and vegetable juice drink was developed. Through orthogonal test,the optimal formula of Qiamagu andflat peach complex juice drink is Qiamagu 30%,flat peach pulp 15%,sugar 8%,citric acid 0.6%,CMC Na-0.04%,xanthan gum 0.04%,and pectin 0.06%. The product has uniformity texture,delicate taste,sweet and delicious,uniqueflavor.
