摘 要:产品以水、蓝莓叶、果葡糖浆为原料,实现了从知识产权(专利)到大规模工业化生产的创新全过程。单因素实验及正交试验表明,当蓝莓叶茶/ 水(w/w)=1∶30,萃取温度为85℃,萃取时间为30min,果葡糖浆用量为7.0%时,蓝莓叶茶植物营养素饮料为透亮的香槟色,入口茶香厚重,果香丰富,酸甜适口,生津解渴,其茶多酚含量达747.20mg/kg,原花青素含量达0.43g/L,绿原酸含量达0.50g/L。这种富含植物多酚的蓝莓叶茶饮料,不含任何添加剂,对整个饮料行业的发展、食品安全以及人类健康尤其是儿童健康具有极其重要的意义。

Invention Process of Phytonutrients Beverage Made from Blueberry-Leaves-Tea and Its IndustrializedProduction Standards

Abstract: Blueberry leaves are rich in phytonutrients. To produce“healthy,nutrient,tasty and thirst-quenching” naturalbeverages,the whole innovation process from intellectual property (patent)to industrial mass production of thephytonutrients beverage using water,blueberry leaves tea and fructose-glucose syrup as materials was introduced. Theexperiments results showed that,under the optimized conditions of w(blueberry leaf tea)/w(water)1∶30,temperature85℃,time 30min,fructose-glucose syrup amount 7.0%,the phytonutrients beverage,which was champagne-coloredwith strong tea flavor and ample fruit aroma,had a moderate sweet and sour taste and could induce saliva and slakethirst. The contents of tea polyphenols,procyanidins and chlorogenic acids in this drink were 747.20mg/kg,0.43g/L,and 0.50g/L,respectively. As a phytonutrients-rich drink without any additives,this phytonutrients beverage made fromblueberry leaves tea will be of great practical significance for food security,human health and development of beverageindustry.
