ZTC-101澄清剂澄清绿茶提取液试验研究

摘要:【目的】通过使用ZTC-101 澄清剂对速溶茶工业化生产中不同阶段的绿茶提取液进行试验,研究ZTC-101澄清剂处理绿茶提取液的效果及最佳工艺条件。【方法】将绿茶生产中不同阶段的茶提取液作为原料,在单因素实验的基础上,采用正交试验优化ZTC-101澄清剂对绿茶提取液的工艺条件。以绿茶提取液的浊度和透光率为指标,重点探讨了澄清剂添加量、茶提取液的浓度、pH值、澄清温度等工艺参数对茶提取液澄清效果的影响。【结果】试验表明,ZTC-101 澄清绿茶提取液的最佳工艺条件为:澄清剂添加量为0.6%,选择生产中的陶瓷膜截留液,温度维持在50℃,pH 值维持在4~6。【结论】ZTC-101 澄清剂适用于速溶茶工业化生产中陶瓷膜截留液的澄清,经济实用,可用于速溶茶的工业化生产。

An Experment and Research on the Use of ZTC-101 Clarifying Agent for Testing Green Tea Extract

Abstract:[Objectives] Through the use of ZTC-101 clarifying agent for clarifying green tea extract of different stages inindustrialized production of instant tea,we research the ZTC-101 clarifying agent effect of processing green tea extract andoptimum processing condition.[Methods] On the basis of single factor experiment with the material of green tea extract ofdifferent stages,we optimizie the processing condition of ZTC-101 clarifying agent testing green tea extract through theorthogonal test and turbidity and light transmittance of green tea extract are indexes. The paper focuses on discussing theimpact of the adding volume of clarifying agent,concentration of tea extract,pH,testing temperature on the effect ofclarification of green tea extract.[Results]Test shows that the optimum processing conditions for ZTC-101 clarifying greentea extract is 0.6% volume of addition,choosing ceramic membrane retentate,and maintaining at 50℃ and pH 4~6.[Conclusion] ZTC-101 clarifying agent is applicable to industrialized production of instant tea with the evidence showingthat ZTC-101 clarifying agent is suitable for clarifying ceramic membrane retentate,which is economical and practical.
