LUMiSizer与近红外指纹技术联用分析解决 果汁类产品中油圈上浮问题

摘要:利用LUMiSizer离心同时实时进行透光度测试技术与近红外指纹图谱联用技术分析并改善果汁产品中油圈上浮。结果表明:采用2300g 离心力,10mm 光学管,470nm波长光源,25℃条件下可以有效对油圈上浮现象进行快速预测。同时利用近红外指纹图谱进行一阶求导并利用主成分分析,可以对香精差异性进行判别。通过对关键原料进行管控,有效改善果汁中油圈上浮。

The Solution to Lipid Flotation in Fruit Drinks by Instrumental Analysis of LUMiSizer Combined withInfra Fingerprint Techniques

Abstract: In order to ameliorate the oil ring flotation issue in fruit drinks,the centrifugation and the light transmittancewere performed simultaneously in LUMiSizer in combination of the near infra fingerprint technique. The results showedthat the oil ring flotation could be predicted using the parameters of 2300g,10mmPC,470nm wavelength and 25℃ inLUMiSizer. The main ingredient analysis function along with the first derivation analysis in infra fingerprint coulddifferentiate the emulsion flavoring compounds. Consequently,the key raw materials and the oil ring flotation could beefficiently controlled.
